The water drawn from century-old wells is the secret to Hoi An's famous Cao Lau noodles. There is a chewiness in these noodles which is the result of letting the rice soak in a mixture of lye and the famous well water before it is ground to form the noodles.Delicious and only found in Hoi An, Vietnam.
